Like I said in an earlier post, I was attempting to make the Bacon Explosion. It is literally a log of bacon with some ground sausage in it. One could say it is a Heart Attack waiting to happen.
I said right from the start I did not want to eat much of it and certainly did not, but it is something I have wanted to try and make for a year or so now. The video above goes through the steps on how to make this magnificent piece of art work, but if you want a written explanation, check out BBQ Addicts How To post.
I’m not going to go into much detail, because I think you should watch the video, which is 6 minutes itself, but there are a couple observations I want to go over.
The first thing is you have to watch the log closely while cooking. I cooked it on the BBQ on the lowest heat it could go and for the first hour it was good. But after that hour the greasy the was coming from the log got hot enough to ignite. At this point I wasn’t watching it as closely because I didn’t think there would be any need to, I was wrong. Lucky, though, the log was not to charred and was still good. If I were to do it over again, I would definitely watch it closer as it cooks longer.
The second is about the fattiness of the meat itself. I’m fully aware about how unhealthy this is and was expecting this Bacon Log to be packed with grease and fat, but I was somewhat wrong. When I pre-cooked the bacon on the inside, I made sure to drain all excess fat and I patted it down when it was finished cooking. This does not get rid of all the fat, but helps get rid of the stuff that hangs around. I also used lean sausage meat, which is what I use regardless of what I’m doing. Then to have a magority of the fat on the outer layer burn off while on the BBQ made this pack of meat, drier and less greasy than one might expect.
I was not certain as to how one might eat a Bacon Log, but I decided to cut it into slices. I tried a slice with some cheese on an English Muffin. It was good, as I used a Honey Garlic/Maple Syrup BBQ sauce mix I made. The rest has gone in the fridge and is up for grabs to anyone who wants to try it. I highly recommend offering this to as many friends as possible to minimize internal damage, to yourself.
